Hello guys,hero_kayne Welcome to the first of what I hope are many posts here. I’ll be sharing the latest goings on with me, the family, the food, surfing and more so please check back often and I hope you enjoy your time here. First up is to update you all on my latest adventures. I am now the new spokesman for Dare Foods and Breton Crackers, a great company that has been providing quality crackers for over 30 years. Turkey Style Carnitas

2 lb bone in turkey thigh (about 2 large thighs)

Salt and black pepper

2 teaspoons dried oregano

2 1/2 teaspoons ground cumin

2 teaspoons ground coriander

1/2 cinnamon stick

1/2 teaspoon chili powder

4 garlic cloves chopped

1 bay leaf

1 piece of orange peel, white pith removed

1 piece of lemon peel, white pith removed

1/2 bunch cilantro stalks lightly pounded to release flavor

1/2 onion diced

3/4 cup chicken stock

Juice of one orange.

Method

Pat dry turkey thigh then salt and pepper liberally. Marinate the turkey 4-6 hrs in the dry ingredients (preferably overnight) Place in a crock pot. Add cilantro stems, onion, chicken stock and orange juice. Cover and cook in 350F degree oven until meat pulls away from the bone and is tender. About 2-3 hrs
